Corn and Tomato salad
Another meal for the salad lovers, Corn and Tomato salad. Easy to prepare, healthy to eat. I am obsessed with salads (everyone who knows me can confirm this without any doubt…some of them even question my sanity) so I love to experiment with different vegetables and try to avoid meat. This is one of those that just stick in the back of your mind and you love coming back to them. Easy to make and feeds up to six people.. so, when you are in the mood for the salad, bring your friends and share the meal…I never do because i love it, but you can..
For this meal you will need the following ingredients:
3 mediums ears sweet corn
1 ½ c grape tomatoes, quartered
¼ c chopped red onion
2 tbsp. chopped cilantro
2 tbsp. fresh lime juice
2 tsp extra virgin olive oil
Pinch of cumin
How to prepare the Corn and Tomato salad:
- Cook corn in large pot of boiling water until just tender, about 5 min.
- Drain and let cool to room temperature. Cut kernels from ears and transfer to large bowl. Add remaining ingredients and mix until well combined.
- Season with salt and pepper to taste. Serve immediately or chill for 2 hours.
