Spinach Frittata
You know i LOVE the Italian cuisine, so this Spinach Frittata is high on my list of foods I recommend. Easy to make, healthy and delicious. Throw in some eggs, put scallions, spinach, some cherry tomatoes and mozzarella on top and you are heaven. Easy, quick, healthy and delicious, the combination that we strive for.
For this meal you will need the following ingredients:
2 tbsp. olive oil
2 tbsp. scallions, thinly sliced
10 oz fresh baby spinach, chopped
3 lg eggs
5 lg egg whites
1 c cherry tomatoes
4 slices mozzarella
How to prepare:
- Heat 1 tbsp. olive oil in large nonstick skillet over medium heat. Add scallions and cook, stirring, until softened , about 1 min.
- Transfer scallions to large bowl. Add spinach, whole eggs, and egg whites, season with salt and pepper. Beat with fork until well blended
- Heat broiler. Add remaining 1 tbsp. oil to same skillet over medium heat. Add egg mixture and scatter tomatoes on top. Cover skillet and cook until eggs are set around the eggs, about 4 min.
- Broil from heat until frittata is lightly browned and center is set, about 4 min. top with cheese. Cover and let it stand 1 min to let cheese melt. Cut into 4 wedges.
