Chopped chicken salad
To boost your health and feed your body with proteins, this next recipe is a treasure. Chopped chicken salad is the perfect combination of great protein, healthy greens and excellent taste. Now this…this is my go-to salad several times each week. Its healthy, fresh, it has one of the proteins that provide excellent source of protein and at the same time you can manipulate the taste to your liking. If you wish to change from rotisserie chicken, you can grab several chicken breasts, put some spice to your liking, pop it in the oven and voila…same protein, different vibe. Try to keep the other ingredients in line and you got yourself a superstar dish
For this meal you will need the following ingredients:
3 tbsp. apple cider vinegar
2 tbsp. extra virgin olive oil
2 tsp Dijon mustard
8 c lettuce / spring mix salad
4 lg hard-boiled eggs, peeled and quartered
1 sm cucumber, sliced
1 ½ chopped rotisserie chicken (about 8oz)
1/3 chopped red onion
How to prepare the salad (so simple):
- Whisk together vinegar, oil, mustard, and ¼ tsp each salt and pepper in serving bowl.
- Add remaining ingredients and toss gently to combine
- Serve salad in bowls
