Greek Pizza
Pizza is everyone’s favorite, but the Greek Pizza is something different. Being from the Balkans, I guarantee that olives, sun dried tomatoes and feta is perfect for pizza. There is something special when you mix feta cheese and sun dried tomatoes, out there we eat that in unbelievable quantities. Place all the ingredients on the wheat pizza crust, stuff it in the oven and prepare to be amazed. I have to admit, this is one of the meals that i love to make and enjoy it without the guilty pleasure…
½ c dry packed sun dried tomatoes
1 tbsp. fresh lime juice
2 c sautéed greens (such as arugula or spinach)
1 whole wheat pizza crust
5 kalamata olives, pitted and chopped
3 oz mild feta, crumbled
2 tsp. oregano leaves
- Heat oven to 450 F, preferably with pizza stone inside
- Soak sun-dried tomatoes in hot water until soft, 10 min, drain and chop.
- Drizzle lemon juice over greens. Scatter greens onto pizza crust. Top with tomatoes and olives, crumble feta on top, and sprinkle with oregano.
- Bake directly on rack or pizza stone until cheese is soft, golden in spots and crust is crisp, about 10 min.
