Chicken and asparagus stir-fry
We all love Chinese food, but this Chicken and asparagus stir-fry is not your typical meal. Excellent to cook when time is limited and you have a lot of work to be done. I love preparing this dish when I have pending online classes, so I can get the meal ready quickly and focus on my trainees. I recommended this dish to all of them, some even when a step above and modified the recipe. Classic, delicious and healthy, the way it should be.
For this meal you will need the following ingredients:
2 tsp soy sauce (reduced sodium)
1 tsp honey
1 tsp dark sesame oil
1 lb asparagus, trimmed and cut diagonally into 1 pieces
1 tsp minced garlic
2 ½ c sliced cooked chicken breasts
1 tsp sesame seeds (optional)
To prepare the dish, just follow these instructions:
- Combine soy sauce and honey in a small bowl. Set aside.
- Heat oil in large skillet or wok over medium-high heat. Add asparagus and garlic. Cook, stirring frequently, 4 min. toss the chicken and soy-honey mixture. Heat thoroughly.
- Sprinkle with sesame seeds (if using). Serve with brown rice or whole wheat couscous.
