For this dish you will need the following ingredients:
2 pkg refrigerated mushroom ravioli
3 c baby arugula
¼ c toasted pine nuts
3 tbsp. fresh lemon juice
2 tbsp. extra virgin oil
2 lemons cut into wedges
How to prepare the Ravioli with wilted greens and lemon:
- Prepare ravioli per package directions, drain in colander, and return to pot.
- Add arugula , pine nuts, lemon juice, and oil. Toss to combine.
- Divide pasta among 6 bowls. Garnish with lemon wedges.
